We are celebrating our second birthday this month, and wanted to celebrate with three bottles of bubbles! Let’s start it off with bang with some Premier Cru Champagne!
Aubry is a family-run grower estate based in the Premier Cru village of Jouy-lès-Reims in the western Montagne de Reims, led by twin brothers Philippe and Pierre Aubry, whose winemaking lineage dates back to 1790. The estate is known being one of the few wineries left preserving and cultivating all seven grape varieties permitted in the Champagne AOC, including rare historical grapes such as Arbanne, Petit Meslier, Pinot Blanc, and Fromenteau alongside Pinot Noir, Pinot Meunier, and Chardonnay.
This wine has it all, it is full of life yet balanced, zippy yet textured, and Citrus forward yet has some weight. Bob this to celebrate something good, or a hard Tuesday night.
Pairing: Seared Belgian Endive With Walnut Gremolata
Fun fact: They have the largest holding of the Fromenteau grape on the planet.

Cremant de Loire
Chenin, Chardonnay, Pineau d’Aunis

Bottle number two is maybe the best Cremant I have tried this decade, seriously. If you aren’t familiar, a Cremant is a wine made in the champagne method , just it isn’t from Champagne.
This wine from Patrice Colin is from the Loire, featuring Chenin Blanc, Chardonnay, and a red grape native to the area, Pineau d’Aunis. I tried this wine blind and thought it rivaled Grand Cru Champagne. Brioche French toast, meets apple cobbler made by my nana. So food friend our contemplative on its own.
Drink this on a Saturday night with friends over a board game that may get too competitive.
Pairing: Furikake Snack Mix while playing board games
Fun fact: The domaine hosts a heavy metal festival every January.
Vincent Richard
Cremant de Jura
Chardonnay

Bottle three is from my favorite area in France, the Jura. a magical land that provides our cheese for the burger (Comte) and is still run by a bunch of renegade farmers that are iconoclasts and characters.
Here we have a Cremant de Jura, made entirely of Chardonnay from domaine Vincent Richard. Run by a fourth generation husband and wife winemaking team, the Richard’s focus on biodynamic farming and creating wine that resemble those of the late 19th century.
This bottle is pure hedonism. It has all the great calling cards of Jura Chardonnay. Marzipan, lemon curd, chalk, and nuttiness. This is calling for that late summer pie you have been meaning to make.
Pairing: Perfect Peach Pie
Fun fact: The Richards main source of income is from their cows, not their grapes.
