With the care and attention that Pollerhof gives every cuvee of wine, you’d be surprised to find out that this estate is a one man operation. Currently ran by Erwin Poller, the estate was started by his grandfather, Johann Poller, in 1920. Grapes planted here range from Gruner Veltliner to Gelber Muskateller to Blauburger (surprisingly not related to Blauburgunder for those who are curious).  

This white blend evokes notes of elderflower, nectarine, delicate flowers, and late summer happiness. All of the grapes are hand picked and whole cluster pressed with the utmost care taken to not damage the stems which can cause too much bitterness. While we are usually fans of spontaneous fermentation in our Natty Club, Pollerhof has developed his own yeast from grapes around the vineyard and uses that to start fermentation.

The label of vom löss is the dirt that the vines are grown in to add another layer of enjoyment and truly feeling like you’re drinking the wine in the vineyard.

Fun fact: Erwin, being the chicken fan he is, takes the less productive hens from a local farm who typically culls them to give them a second chance at life.

Coming from a unique terroir, the Lentsch family strives to restore it and place the island of Lipari on the wine map. The family started the estate in 2005 with inspiration coming from a morning walk. Focussing on indigenous grapes from these islands has created a merger of land and human intervention that makes wines that are sometimes too easy to drink.

The name and label is inspired by the Ypsilon shape that the Aeolian archipelago forms just off the coast of Sicily. Predominately native variety Corinto Nero with other more widely known varieties as support, the grapes are grown on volcanic soil which adds complexity to the wine. Notes of red fruit and a crunchy texture make this a perfect pairing for an afternoon spent reading on the porch or watching a show on the couch.

This estate focusses on using the natural force of gravity to make wine, usually sifting the wine off of the skins slowly and naturally. A motif of the winery to allow mother nature to do her thing.

Pairing: Arancini with Fresh Tomato Sauce

Fun fact: Lava from volcanoes around the estate formed a natural wall to keep the grapes warm overnight despite naturally chilly breezes.

This estate was started by the Mathieu Deiss, of whom we have featured some wines already under the Deiss name, and his partner Emmanuelle Milan. Mathieu inherited a plot of vines from his uncle in the commune of Bennwihr and together with Emmanuelle decided to push the envelope of what biodynamic wine can really be.

The estate started in 2011 and was Demeter certified by 2013. Carrying over philosophies from Deiss, they co-plant grape varieties with the desire to accentuate the terroir, texture, minerality and depth that each wine carries rather than a specific grapes characteristics.

Singulier is a blend. Of which all grape varieties are vinified separately then blended at the end. Carbonic maceration is used to maintain freshness of the grapes and an alluring fruit quality. All varieties are left on the skins for 2-3 weeks, and after blending, is aged for 12 months in stainless steel. The results being a textured wine filled with notes of apricots, white flowers, and wet stone.

Pairing: Baba Ghanouj

Fun fact: Mathieu and his father, Jean-Michel have many of the same friends, and while most people might find this a tad awkward, Mathieu embraces it and lives life to the fullest.
